Grilled chicken skewers with Bianca Sweet White Vinegar(Carandini)

Carandini is among the oldest noble groups of Modena, plus they have already been producing fine vinegar since 1641. This is not your typical supermarket white vinegar (you understand, the type that works equally well as a cleaning solution base as a kitchen staple). Carandini’s Bianca Sweet Wine Vinegar includes a bright, honeyed flavor that lends a delicate sweetness to dishes.

It’s especially appealing in marinades, just like the kind applied to these grilled chicken skewers. The acidity of the sweet white vinegar is offset by way of a simple combination of extra virgin essential olive oil, salt and ground pepper. That’s all that’s required.

Mimic the brightness of the marinade by creating a punchy, lemony parsley sauce that is tasty enough that it is worth making extra to drizzle on other dishes, like grain bowls or grilled fish, through the entire week.
