You dont need a pricey new device, or an obscure ingredient you need to hunt for. You merely require a fresh method of preparing a vintage favorite. In “A PROVEN WAY,” well revisit classic ingredients and dishes, providing them with a fresh twist having an easy technique you havent tried before.

Fortunately, Shopsin’s still exists, and it’s really still a family-operated, if less cantankerous, experience for hungry patrons. However when I’d like a Shopsin’s-like meal without leaving the home, I could throw together among the restaurant’s most iconic disheswith out a fuss.

Macaroni and cheese and pancakes, what more should you know? If you want carbs within carbs, if you want cheese upon cheese, this is actually the meal for you personally. The original Shopsin’s method involves plain elbow noodles, but I usually appear to have a container of the leftover Kraft stuff lurking in the rear of the fridge and I favor the excess cheese boost.

Believe me, there is no better endgame for leftover mac and cheese. And when you utilize all-in-one pancake mix, you could have these in your belly in minutes and spend all of those other day in circumstances of blissful satiation.

Obviously, they are equally decadent for breakfast, brunch, or lunch, and they’re going to be considered a huge hit with the frittata-jaded friends in your orbit. If you want living dangerously, you may also sandwich two pancakes between eggs and bacon, because they do Shopsin’s for a delicacy as confrontational and ingenious as its inventor.

Macaroni and Cheese Pancakes


  • Peanut or similar neutral oil
  • Butter
  • 3 cups prepared pancake batter, from the mix or homemade
  • 1 heaping cup cooked macaroni and cheese, warm or room temperature
  • 1 1/4 cups shredded cheddar, or your selected cheese


  1. Preheat the oven to 250 degrees and reserve a large sheet pan.
  2. Heat a large skillet over medium heat. Put in a thin coating of oil and heat until just shimmering, adding a pat of butter.
  3. Spoon out the batter in roughly 4-inch circles until it bubbles, about 1 to three minutes. Don’t crowd the pan.
  4. Once the batter is bubbling, drop 1 tablespoon roughly of the macaroni and cheese onto each pancake, accompanied by a sprinkle of cheese.
  5. Turn the pancakes over and cook another one to two 2 minutes. Press down in it to cook evenly.
  6. Remove to the sheet pan and keep warm in the oven.
  7. Repeat with all of those other batter. Put in a bit more oil and butter to the skillet as needed.
  8. Serve warm with maple syrup, hot sauce or both.
